Meal #1

Coconut Crusted Tempeh (or Grilled Marinated Swordfish or Salmon)

Ginger Almond Broccoli Salad with Farro, Carrots and Radish

REHEAT INSTRUCTIONS:

  • Lay out tempeh on a sheet tray, Heat in a 350 oven, uncovered for 10-12 minutes until heated throughout.

  • Heat Swordfish or Salmon in a 350 oven uncovered for 8-10 minutes until heated throughout.

  • Salad should be eaten chilled!


Meal #2

Harissa Roasted Cauliflower Steaks with Olive, Raisin & Walnut Tapenade

Brown Rice Pilaf with Caramelized Onions and Lentils

REHEAT INSTRUCTIONS:

  • Heat Cauliflower Steaks covered with foil in a 350 oven for 20-25 minutes until heated throughout.

  • Heat Pilaf the same way!


Meal #3

Herby Marinated Tofu (or Herby Marinated Chicken)

Beet Salad with Arugula, Fennel, and Orange Vinaigrette & Hazelnut Crumble

REHEAT INSTRUCTIONS:

  • Heat Tofu covered in foil in a 350 oven for 10-12 minutes

  • Heat Chicken covered in foil in a 350 oven for 15-20 minutes

  • Enjoy Beet Salad Cold! Toss the Marinated Beets with the Arugula Fennel mixture and Hazelnut Crumble.


Meal #4

Portobellos with Peppers and Onions (or + Steak, portobellos, peppers and onions)

"Creamy" Orzo "Mac" with cashew sauce & peas

REHEAT INSTRUCTIONS:

  • Heat Portobellos with Peppers & Onions covered with foil in a 350 oven for 20-25 minutes. (same if it has steak)

  • The Orzo likes to sop up the Cashew “Cheeze” Sauce, so heat the Mac in a saucepot over medium heat, adding splashes of water to bring back the creaminess! Stir frequently until heated throughout.


Meal #5

Spring Pea and Mint Soup

REHEAT INSTRUCTIONS: Heat Soup on medium low heat, stirring frequently until heated throughout. This soup can be frozen, but remember to take some out of the glass to allow for expansion!
