Meal #1

Beyond Burgers (or Turkey Burgers) with Zucchini & Spring Onions

Grilled Asparagus with Carrot Chutney

Couscous with Olives, Currants & Chickpeas

REHEAT INSTRUCTIONS: Heat Burgers in a 350 oven, uncovered for 10-12 minutes, until heated throughout.

Asparagus can be lightly warmed the same way as the burgers, or eaten chilled.

Couscous can be warmed the same way as well.


Meal #2

Caesar Salad with Radish, Persian Cucumber & Crispy Chickpeas

Crispy Tofu Cutlets (or Lemon Garlic Chicken Thighs)

REHEAT INSTRUCTIONS: Toss the Caesar ingredients with the salad dressing and crispy chickpeas.

  • Heat Tofu Cutlets in a 350 oven, uncovered, for 10-12 minutes until heated throughout.

  • Heat Chicken Things in a 350 oven, covered with foil for 12-15 minutes, until heated throughout.


Meal #3

Gigante bean "tuna" salad, celery, pickles, dill, red onion, chives & capers.

Steamed green beans with almond crumble.

Little leaf greens salad, lemon vinaigrette, spring veggies

REHEAT INSTRUCTIONS:

  • “Tuna” Salad is meant to be served cold or room temp.

  • Steamed green beans can be served cold, or lighly rewarm in a 350 oven, uncovered for 8-10 minutes, squeeze lemon ontop and add almond crumble.

  • Toss Salad ingredients with dressing and enjoy!


Meal #4

Tamari ginger tofu bok choy, carrots, bamboo shoots & water chestnuts

Tamari ginger beef with bok choy, carrots, bamboo shoots & water chestnuts

Quinoa & Brown Rice pilaf

REHEAT INSTRUCTIONS: Saute Tamari Ginger Tofu (or Beef) in a large skillet over medium high heat, stirring often until heated throughout. Alternatively, you could cover and warm in a 350 oven for 20-30 minutes.

Heat Pilaf in a 350 oven, covered with foil for 12-15 minutes.


Meal #5

Red Lentil Dal with toasted coconut & curry leaf tadka

REHEAT INSTRUCTIONS: Heat Dal on medium low heat, stirring frequently until heated throughout. This soup can be frozen, but remember to take some out of the glass to allow for expansion!
