Napa Cabbage Salad with Green Beans, Tomato, Peanuts, Scallion, Mint, Cilantro & Basil, Nuoc Chom Vinaigrette
Rice Noodles
REHEAT INSTRUCTIONS:
Reheat chicken or Tofu in a 350 oven, covered in foil for 15-20 minutes until heated throughout.
Toss salad with Vinaigrette and chopped peanuts.
Serve over chilled rice noodles.
Meal #2
Soy Chorizo & Potato (Or Turkey) Tacos with Mushrooms, Peppers & Onions
Avocado & Tomatillo Salsa Verde, Pickled Red Cabbage & Red Onions, and your choice of Corn or Flour Tortillas
REHEAT INSTRUCTIONS:
Heat Taco Filling in a 350 oven, covered with foil for 20-25 minutes until heated throughout.
Heat tortillas according to package instructions.
Serve wtih Salsa and Pickled Cabbage/Onions!

Garlic & Herb Braised Chickpeas (OR Garlic & Herb Shrimp OR Salmon)
Gingery Braised Zucchini
Rice Pilaf
REHEAT INSTRUCTIONS:
Heat Chickpeas in a 350 oven, coverd with foil for 20-25 minutes until heated throughout (they could also be microwaved, or heated in a pot with a splash of water, stirring frequently.
Heat Zucchini in a 350 oven, covered with foil for 20-25 minutes.
Heat Pilaf in a 350 oven, covered with foil for 20-25 minutes

Whole Roasted Eggplant with Tomato & Basil
Bulgar Salad with Pomegranate, Parsley, Pine Nuts & Walnuts
Israeli Cucumber, Tomato & Red Onion Salad
REHEAT INSTRUCTIONS:
Heat eggplant in a 350 oven, covered with foil for 15-20 minutes
Serve bulgar salad and Israeli salads chilled.

Spicy Black Bean Soup
REHEAT INSTRUCTIONS:
Heat Soup on medium low heat, stirring frequently until heated throughout. This soup can be frozen, but remember to take some out of the glass to allow for expansion!
