Meal #1
Grilled Tofu (or Native Cod) with corn, poblano, tomato and ginger relish
Green herb rice pilaf
REHEAT INSTRUCTIONS:
Heat Tofu/Cod in a 350 oven, covered in foil for 20-25 minutes until heated throughout.
Heat Pilaf in a 350 oven, covered in foil for 20-25 minutes. Pilaf could also be microwaved with a wet paper towel on top.
Meal #2
Cashew Mac n cheese with peas, edamame and spinach
Caesar salad with crispy chickpeas, & summer veggies
REHEAT INSTRUCTIONS:
Heat Mac and “Cheese” in a 350 oven, covered in foil for 25-30 minutes until heated throughout. This sauce likes to seize up, so add a splash of water and stir to bring creaminess back.
Toss Salad ingredients with dressing and chickpeas.
Meal #3
Lemon miso tofu (or Chicken), snow peas& broccoli
Soba noodle salad with red cabbage, carrot and cucumber with Sesame vinaigrette
REHEAT INSTRUCTIONS:
Heat Lemon Miso Tofu/Chicken in a 350 oven, covered with foil for 20-25 minutes until heated throughout.
Toss Noodle Salad with Vinaigrette and serve chilled.
Meal #4
Stuffed zucchini with Impossible (or +grass fed beef), basil, red pepper & tomato
Israeli CousCous Salad with Cucumber, Dill, Green Beans & Tomato
REHEAT INSTRUCTIONS:
Heat Stuffed Zucchini in a 350 oven, covered with foil, for 20-25 minutes until heated throughout.
Serve couscous salad chilled or room temp.
